Scallion steamed twisted rolls (香葱花卷)
Ingredients:
250g all purpose flour
50g cake flour
10g sugar
4g baking powder
4g yeast
172g milk
1tbsp oil, 1tsp salt, and 1/4 cup scallion
简单易做的花卷还是要先整形再发酵。揉面到三光(手光,盆光,面光滑),面团揉软。面团盖上保鲜膜醒10分钟。整形!擀成薄面皮(大约2mm,以上的量可以做10-12个小花卷),刷上油,撒盐,撒葱花。紧紧地卷起来,切成3cm小段。然后就按照自己喜好捏花。放在温暖地方发酵60-75分钟,冷水上笼,水开蒸10分钟~ ready!
先整形再发酵,比较容易做造型,没有 开锅瘪的问题!
