Stir fried shredded pork with pepper (how to marinate meat..)



The key step of this dish is marinating the meat, making it tender. Here is two tricks...

1. Hammer (I like OXO meat tenderizer, here) the meat before shredding. For thin and small piece, you may also use the back of the knife (I love Zwilling J.A. meat cleaver, good for vegi too).
2. Marinate the shredded meat (about 300g) with 1/4 tsp baking soda, 1tsp starch, 1tbsp oil, 1/4 tsp white pepper powder, and 1tsp soy sauce, for at least 20 minutes.
