Stewed Chicken with Pickle and Baby Taro & Review of Le Creuset 2-Quart Legumier

STEWED CHICKEN WITH PICKLE AND BABY TARO 

Hi all, I will share a pot dish recipe - stewed chicken with pickle and baby taro in this post. It is my original recipe, and I hope you like it!

食材:
1. Boneless and Skinless Chicken Thighs 14oz (3-4 pieces)
2. Baby Taro 14oz

调料:
 酸菜1-2片(切小块)Chinese Pickle, 泡椒5-7粒 ( Pickled chili),泡姜一小块( Pickled ginger),生姜1小块( Ginger),大蒜3-4瓣 ( Garlic 3-4 Cloves),花椒10几颗 ( Chinese Pepper Corn),油2.5tbsp ( Oil 2.5Tbsp),老抽1tbsp ( Dark Soy),生抽2条tbsp ( light Soy),料酒1tbsp ( Cooking Wine),糖1tbsp (Suger),鸡汤或者水100ML( Chicken stock or water)


 热锅放油至6成热,放入酸菜,泡椒,泡姜,生姜,大蒜,花椒,炒香
Heat the oil, add sliced pickle, chili, ginger, garlic, chinese pepper corn, stir well


加入鸡肉,一起炒到断生。然后加老抽,生抽,料酒,糖,鸡汤,拌均匀
Add chicken, stir well with all spices, then add soy, cooking wine, sugar, chicken stock, mix well


最后把芋头放在最上边,加盖,大火到滚,调中小火,烧25-30分钟。开盖,收掉多余水气。起锅前尝一下咸淡,再酌情加盐。因为酸菜的咸度不一样,经过30分钟的烹调,酸菜的盐分也已经均匀的被鸡肉和芋头吸收。
Add the baby Taro over the chicken, don't mix them. Just cover the pot with lid, cook about 25-30 minutes with medium/low heat. Then remove the lid, cook with high heat for 3-5 minutes.


P.S.如果不采用铸铁锅烹饪这道菜,请多加50-100ml鸡汤或水。因为其他锅走气会比较多。
       If you don't cook with cast iron pot, please add 50-100ml more chicken broth
